Easiest Ice Cream Cake You’ll Ever Make

One thing I remember most about my childhood was the elaborate birthday parties my mom threw me. She always set a theme and went all out creating the coolest experience for my friends and me for that 3-hour period. We’re talking turning the family room into a pretend airplane with rows of seating, then going through “Customs” with our pretend passports for my London party, getting our hair and makeup done for my glamour party, and an awards ceremony after obstacle courses for my Summer Olympics party in 1996 (and this was well before the days of Pinterest so huge kudos to her).

While I like to think I throw my kids great parties, they will never live up to the parties my mom threw for me. So I scrape by, cutting corners when I can, while still making sure that my children have a special day. One way to cut corners is to avoid baking a cake, yet still “make” a cake (I don’t always make a cake, but when I do it has to be easy after Bear’s first birthday cake fiasco). My kids love ice cream, but making an ice cream cake be a little intimidating. That was until I discovered ice cream sandwich bars as the basis for the ice cream cake.

For a 9×9-inch cake, you’ll need:

  • 12 ice cream sandwiches
  • 10 cookies
  • Tub of whipped topping
  • 8oz hot fudge (unheated)
  • Sprinkles
  • Plastic wrap

1. Line a 9×9″ glass pan with plastic wrap (enough that the plastic drapes over all four edges). Frost the plastic wrap (bottom of the pan and all four sides) with a layer of whipped topping.

2. Place one layer of ice cream sandwiches to cover the entire pan. You will need to cut some sandwiches to fit the pan.

3. Frost the ice cream sandwiches with another later of whipped topping.

4. Pour fudge (room temperature over the whipped topping. Catch your baking buddy sneak a taste.

5. Sprinkle crushed cookies atop whipped topping and spread them out.

6. Add one more layer of ice cream sandwiches. Fold edges of plastic wrap over the top of the last layer of ice cream sandwiches. Pop in the freezer for a minimum of 2 hours (the longer the better).

7. Run upstairs and greet Little Man after his nap.

8. Remove from freezer and turn the pan upside town atop a serving tray. Add sprinkles or use icing to write “Happy Birthday.”
